Zucchini Bread
3 1/4 C. flour 4 eggs beaten
1 1/2 tsp. salt 1/3 c. water
1 tsp. nutmeg 1 tsp. lemon juice
2 tsp. baking soda 1 cup walnuts or raisins
1 tsp. cinnamon ( roll in flour)
3 c. sugar (or less)
2 cups of grated zucchini
1 c. vegetable oil
Method: Sift flour, salt, nutmeg, baking soda, cinnamon, and sugar in a bowl. In another bowl combine eggs, oil, water, zucchini and lemon juice. Mix wet ingredients into dry ingredients. Add nuts and fold. Bake in 2 standard loaf pans and bake for 1hr @ 350F or until tester comes out clean. Serve warm with butter.
